
Ingredients
2 slices whole wheat bread, torn
4 T fresh cilantro
2 cloves garlic
1 15 0z can black beans, rinsed and drained
2 t taco seasoning
1 egg
Place torn bread in a food processor bowl or blender container. Cover and process or blend until bread becomes crumbs.
Transfer crumbs to a large bowl and set aside.
Next, process or blend cilantro and garlic until finely chopped. Add beans and seasoning. Process or blend until beans are coarsely chopped and mixture begins to pull away from the sides.
Add mixture to the breadcrumbs in the bowl.
Add egg, mix well and shape into four 1/2 in thick patties.
Grill patties on a lightly greased rack or an uncovered grill directly over medium heat for 8-10 minutes or until patties are heated through, turning once. (I cooked mine on my George Foreman.)
Place the black bean burger on a bed of coleslaw and top with tomatoes, guacamole, and limejuice. I served it with cheese quesadillas. You can also put it on a bun to make it more burger-like.
Serve with healthy coleslaw
Trevor claims he hates black beans. How someone can like every other color bean, but hate the black bean I will never know...
ReplyDeleteSince Trevor had to work late and wouldn't be home for dinner, I decided to make myself something he would never like.
It was good. I was very very disappointed when I realized I had neither guac or tomatoes. I think it definitely definitely would have been better with guac and tomatoes. (I graciously photoshopped some guac and tomatoes in the photo so you all would have a little better idea of how beautifully this dish can be presented...I hope you appreciate my efforts) It tasted very healthy and I really felt like I needed dessert after, but it was yummy. I will definitely make it again if I am ever home alone for dinner again.
Does anybody know if black bean juice stains? I can let you know tomorrow...

I found a similar recipe that said to add in salsa. That would be yummy too!
