Fruit Salsa & Cinnamon Tortilla Chips
I made this last night to take to a game night with friends. So delicious and if you were to use whole wheat tortillas for the chips pretty dang healthy! I found it on Our Best Bites. I actually made it over a year ago for a cooking group that I was in. I kept remembering it being so hard to make and so I haven't made it since. I think because it was combined with a bunch of other time consuming recipes that is what made it hard. Because it is a really simple recipe.

Basically you pick whatever fruit you want. I try to pick fruits that are different colors (and on sale). I made this last night with strawberries, kiwi, mandarin oranges & blueberries. You can use raspberries, blackberries, mangos, honeydew, pineapple, etc. You get the idea.
Simply, chop all the fruit up into small pieces (this is a little tedious) you could use a food processor if you wanted. But you don't want the fruit mushy. Place the chopped fruit in a bowl and add a little sweetener. By a little I mean a little. I used about a teaspoon, if that, of honey.
You could use agave, brown sugar, powdered sugar etc. There are lots of ideas on the website.
Refrigerate and serve with the cinnamon tortilla chips.
Our Best Bites Cinnamon Tortilla Chips:
Take 6 inch flour (or whole wheat) tortillas
Spray with cooking spray or baste with a little melted butter
Sprinkle with cinnamon & sugar
Cut into triangles with a pizza cutter (each tortilla makes 8 chips)
Bake at 350 for 10-12 minutes
Let cool
This could be an appetizer or a dessert. It really is that yummy. When the cookies ran out at game night the cinnamon chips are what the kids went for instead. They loved them.

Chicken Verde Wontons
These little tiny tacos were so good! I used one large chicken breast and it made a whole bunch. Just a note, only the tops and the edges of the wontons get crispy, not the whole thing. And I cooked them longer than it said to. I made guacamole to dip them in. So good!
Chicken Verde Wonton Tacos
Yield: 8 wonton tacos
Calories per serving: 48 calories per taco; 192 calories for 4 tacos
Ingredients
- 4 ounces cooked, shredded boneless skinless chicken breasts
- 1/4 cup salsa verde
- 1 Tablespoon light sour cream
- 1/4 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 2 Tablespoons sliced green onions
- 1/4 cup reduced fat Mexican blend cheese
- 8 wonton wrappers (these can be found in the refrigerated produce section by the Asian products)
- (optional) 2 Tablespoons diced avocados (add 50 calories for this) and cilantro for topping
Instructions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a small bowl mix the chicken, salsa, sour cream, chili powder, garlic powder, cumin and green onions.
- Place the wonton wrappers on the baking sheet and place about 1 Tablespoon of the mixture on each wonton.
- Divide and sprinkle cheese evenly over the mixture on each wonton.
- Bring two of the opposing corners up and using a little water stick them together.
- Bake for 4-5 minutes or until wontons get crispy. Be careful because they will burn if you don't watch them.
- Top with cilantro and avocado if desired.

Restaurant Style Queso Blanco
I made this last night for our Polar Express party and it was a huge hit and so yummy! I think that next time I am going to substitute the Monterrey Jack for some Pepper Jack cheese next time to give it a little kick! I found it on this website.
- 1 Tbsp cooking oil (veggie, olive, canola - whatever you have)
- 1/4 cup white onion, diced
- 1 large jalapeno or serrano, seeds and stem removed; diced
- 12 oz white American cheese (I have the deli give me 3 slices on 10), shredded
- 4 oz Monterrey Jack cheese, shredded (optional; don't use pre-shredded)
- 1/4-2/3 cup cream, half-and-half, or whole milk
- 1 roma tomato, seeds removed and diced
- 1 small bunch cilantro, roughly chopped
- Heat the oil in a saute pan. Cook the onion and pepper until softened and reduce heat to medium-low.
- Add the shredded cheese and 1/4 cup of the cream. Stir until mostly melted.
- Add the tomatoes, cilantro, and additional cream a little at a time until you reach desired consistency.
- Serve with chips. I think it would be yummy with bread too.

Fresh Salsa
1 (29 oz) can diced tomatoes w/ garlic and onion
2 fresh tomatoes, diced
1 can shoe peg corn (Green Giant)
1 can chopped black olives
1 bunch thinly sliced green onions
2 avocados diced
1/2 cup Italian dressing
1 small can diced green chili's
juice of one lime
cilantro to taste
dash of salt and pepper
red pepper to taste
Combine in a bowl mix together and refrigerate for a little bit and serve.

Carmel Toffee Fruit Dip
Here is the recipe for the fruit dip that I made on New Years Eve. I got it from Our Best Bites:
1 8oz package cream cheese
3/4 cup brown sugar
1/2 Tbsp vanilla (you can add more to taste I only used 1/2Tbsp)
1 bag toffee chips
Let the cream cheese reach room temperature. Mix it with the brown sugar and vanilla. Refrigerate. Just before serving add half a bag of toffee chips and mix well. The chocolate covered toffee chips would be super yummy. I couldn't find any of those, the regular ones were yummy too.

Efrain's Salsa
I got this receipe from Krista and it is super good!
1 medium onion
2-3 colves garlic
1 bunch cilantro
2-3 jalapenos
salt to taste
half a fresh lime-juice squeezed in
2-3 tsp sugar
5-7 lbs Hunts stewed tomoatoes (I usually use 3-5 28oz cans)
1 tsp Taco seasoning
Chop onion and garlic. Chop cilantro. Chop jalapenos (I take out the seeds so it is not too hot) Set aside.
Blend tomoatoes in blender. Add these ingredients together-stir. Do not but in blender.
Add sugar, lime juice, salt and taco seasonings.
Put in fridge over night.

Frito Chili Dip
2 (8 oz.) pkgs. cream cheese
1 can “no beans” chili
1 small can chopped olives
Melt in microwave and mix together. Serve with Fritos.
